There are other sweet treats in Belgium besides chocolate and a popular one at Christmas is the Speculoos. These thin, crunchy spice cookies may be named after the Latin word for mirror because the cookies are imprinted with different patterns from molds. Now the cookies are ground up into a peanut butter-like spread, sprinkled on waffles, and crumbled into ice cream.
