Bethmännchen

To pace myself through the Christmas cookie array, I've decided to focus on the specialties at each stop. In Frankfurt I tasted Bethmannchen, a cookie made with marzipan, rosewater, flour, and egg and baked for Christmas Day. The cookies are named for a banker and city councilman and were originally decorated with almonds on 4 sides in honor of his 4 sons. After one son died, the cookies were modified to include almonds on only 3 sides. Or maybe almonds got too expensive.
